"My taste buds have been heightened. I am not willing to waste calories on anything mediocre. It has to be the best or it’s not worth it." Brilliant. This is my food philosophy, too. I am a group fitness instructor and I LOVE FOOD. The two passions balance out nicely:) Now that I understand the concept of eating for pleasure, I can be satisfied with the occasional indulgent treat, enjoy it for the wonder that it is, and stay right on track. Love that you're a "fit pastry chef." It can be done!

I appreciate your post Emily. It gives me the hope to bake more and nibble less. For me, the key is to bake when I have already eaten breakfast or lunch. If I bake when I am hungry, forget it. I will gain 5 pounds in one shot!

Given that I break out in a sweat whenever I bake anything elaborate, I don't bake often, but when I do--having a full tummy ahead of time is the key to my success. That and a stichec up mouth!

I love your web site!

I am a professional pastry chef and the most common question I get is "How come you're not 500 pounds?" Although I am not "skinny" most people are surprised I am not plump when they find out what kind of work I do. I do take the time to explain to them that while I do taste everything to make sure the flavors are correct, I, like Emily, do not wish to waste my time/calories on dull desserts. I do try to work out 5 days a week, sometimes more, sometimes less. As we age it gets harder to maintain a healthy weight and body so being selective about which desserts I eat is a must. I don't keep desserts around the house because, also like Emily, I will eat them. Life is full of trade-offs and it is important to choose wisely.

I loved this post. I try to drink as much water as I can; I feel full and am less likely to snack on scraps. Also, it helps wash out my system for the still-too-many tastes of sugar I steal throughout the day. However, I think it's also important to acknowledge that carrying around 5 or even 10 more pounds than we'd like is totally worth it to work in this field!

Hi Emily, I really enjoyed this post. I was right w/ you until you got to the part about tasting a line-up of desserts. I do best w/ a limited amount of yummy desserts available (read that as one). Put an, well sort of, unlimited supply of desserts in front of me and there is no way I stop at just tasting. For me, it's time to LIVE, and mmm... eat. Particularly when the desserts are as good as one of your recipes. Lucky for me, we only make one at a time. :-)

I've thought about writing a post like this before. I cook and bake a ton, and people always ask me the same thing... how am I so skinny? Like you... I don't overindulge in things or feel the need to eat day-old desserts. I also think that cooking burns a ton of calories... you're always moving around. My back and sometimes my whole body ache when I'm done. I work sitting in front of a computer all week, but starting next week I'm going to be working as a baker 3 days a week. I'm very much looking forward to it... but not being able to refrain from eating sweets is a very real concern now!
